As a nutrition major, I love to cook. I actually ran a little food account on Instagram a few years ago, where I posted recipes and dishes I made. Though I’m no longer active on it, here is one of my favorite recipes!
Breakfast has always been my favorite meal of the day, and for years now, I’ve been making these greek yogurt pancakes. They’re so delicious, so easy to make, and there’s endless opportunities to make them your own.
When I say easy, I mean easy. You really only have to measure out the flour and baking powder (and I mean I guess you could measure the vanilla extract too, but I honestly just eyeball it each time). Saves time, and you have less dishes to wash afterwards!! A win-win if you ask me.
They’re so customizable too - you can use any flavor of greek yogurt, and add any kind of toppings you want. Blueberry greek yogurt and add in fresh blueberries. Strawberry greek yogurt and add in chocolate chips. Just endless possibilities. Depending on how big you make each pancake, I usually get about 4 pancakes out of this recipe. I've also found that if I let the batter sit for a few minutes as I wait for my pan to heat up, the pancakes come out fluffier - so I highly recommend you test that out.
Ingredients (makes approx. 4 pancakes)
•1/2 cup whole wheat flour
•2 tsp baking powder
•1 5.3oz container greek yogurt
•1 egg
•1 tsp vanilla extract
Directions
1. In a bowl, whisk together the flour, oats, and baking soda
2. Add the egg and vanilla extract into the container of greek yogurt, whisk together
3. Add the egg and greek yogurt mixture into your bowl, and whisk everything together
4. Using a nonstick pan, cook on medium heat until golden brown on both sides
5. Enjoy :)
